What's on the Menu (02/21 - 02/27)?


I will be sharing with you this week about how I meal plan...so, stay tuned! AND...I am in the process of changing it up a little bit too! I am excited to share with you about a "new" idea for meal planning!

But, for now I will share with you what is on our menu this week. Last few weeks, I have been using up beans, legumes, whole grains, etc. and well I think I am going to give our digestive tracks a little break from the beans this week!

SUNDAY:
Polenta w/ Italian Sausage and Basil Cherry Tomatoes
Artichokes
Rustic Bread


MONDAY:
Tortellini w/ Shrimp
Green Salad

TUESDAY:
Lentil Tacos
Fruit Salad

WEDNESDAY:
Meatball Soup (See Recipe Below)
Cheese/Garlic Herb Bisquits

THURSDAY:
Hamburgers
Homemade Potato Fries
Fruit

FRIDAY- SUNDAY (We will be eating out)


Meatball Soup
1 - 16 oz bag frozen Italian style meatballs
3 cups of broth (any kind )
2 cans diced tomatoes with Italian seasonings
1 cup diced potato
1/2 c chopped onion
1/2 c. chopped carrots
1/4 tsp garlic powder (I use 1-2 garlic cloves instead)
1/4 tsp black pepper
3 cups frozen veggies

In crockpot, combine meatballs, broth, tomatoes, potato, carrots, onion, garlic and pepper, cover and cook on LOW for 7-9 hours until potatoes and onion are tender. Stir in frozen veggies and cook on HIGH for 1 hr longer.
Note: Can add some pasta with the veggies if you like!

  2. We just recently tried lentils for the first time in a soup. And it was so good. I'm bookmarking your recipe for the tacos!
