Monday Menu October 22nd


I spent most of the day Saturday working on a 10 week menu. Yes, you read it...10 weeks! Phew! We are very strapped for money for the next two months and I needed to raid the pantry, freezers, etc. to come up with 10 weeks worth of meals. Thankfully, a week ago, I made over 20 meals to freeze. This will come in handy for when the baby comes in about 5 weeks.

It will be a tight two months, but I have faith that God has already provided for us. He is our daily bread! (Matthew 6)

So, with 10 weeks already planned, it should make my weekly menu plans easy to post!

Lunches and Breakfasts are pretty basic and simple. They can consist of the following. These are basic things I have on hand already in my pantry and freezer, etc.

BREAKFASTS
Pancakes (Freezer)
Muffins & Yogurt
Cereal w/ toast
Oatmeal w/ raisins
Bagels & Cream Cheese

LUNCHES
PB&J Sandwiches
Tuna Sandwiches
Vegan Burrito (froz.) with salsa
Cheese Quesadillas
Mac & Cheese (Dairy Free)
Lentil Soup
Roasted Red Pepper Soup

Lunch Sides Options:
Wheat Thins
Pretzels
Popcorn
Pickles
Mandarin Oranges
Carrots w/ Ranch Dip
Celery Sticks
Fruit

DINNERS ---WEEK ONE
Baking: Pie
  1. Pizza (Pesto, Tomato, Gorgonzola, Pineapple...)
  2. Pasta: Penne & Marinara/veggie meat (Salad)
  3. BOCA Burgers & French Fries (Peaches, Salad)
  4. Mexican: Black Bean Nachos (black beans/veggie meat/bell pepper, lettuce, cheese, sour cream, tomatoes, salsa)
  5. Soup: Roasted Red Pepper Soup & Vegetarian Reuban Sandwiches
  6. Baked Fish and Cous cous w/ chickpeas & tomatoes, spinach
  7. Dinner at Kinney Home (Yeah, someone else is cookin')

  1. That's so neat that you were able to plan so far in advance! I haven't been able to plan more than one week at a time, but hopefully I can work my way up.

    Wow! I have been thinking that I'd like to have a 6 week rotation for my menus, but I am not even close to having that ready yet. Congrats on all the planning: it sounds delish! And a new baby five weeks away: how wonderful for you!!

  7. Wow! 10 weeks is VERY impressive! I will have to keep checking in on you since we are a mostly vegan household and I like to see other meat/dairy free menus!

    Is your dairy free Mac & Cheese a purchased meal or a recipe?

    WOW... 10 weeks. That is impressive, but totally understandable with a baby on the way. This week sounds yummy and I may just have to try the veggie Reuben... my fave sandwich! :)
