Recipe Box: Bean, corn, tomato & red cabbage salad
This salad was a harvest from the garden + what's in my pantry inspired dish. I had some delicious sweet red cabbage, perfectly ripe tomatoes, sweet white corn, and sweet red onion from the garden. Then added in some fresh herbs: cilantro, oregano (from our herb garden). The black beans were from pantry - I cooked a batch of dried black beans in my crockpot - and froze 2 cup portions.
Mix all these fresh yummy ingredients together and toss with a light fresh dressing of fresh squeezed lemon juice, 1 tsp of cumin, extra virgin olive oil, salt & pepper.
