MENU PLAN -- June 7th (Pulling it together)

It has been about a month since I have meal planned - because I have been enjoying a couple weeks of meals from friends and then a few weeks of mis-match freezer stuff and leftovers. So, this week I finally took a few minutes (while rocking my newborn baby) to plan some meals.

It is going to be a busy week for us as well because it is Sophia's last week of school and also the girls have long practices for their dance performance coming up on Saturday --AND, to top that off -- I am preparing for Lydia's Wizard of Oz birthday party on Sunday. PHEW!

With all the busy-ness of the week in mind as well as budget (we are running low on the dough) -- I have planned meals that use up things we have and are not too extensive to make.


MONDAY:
  • Terryaki Stir-Fry over brown rice
  • Egg rolls

TUESDAY:
  • Grilled Salmon Patties
  • Mini Ravoli Pasta

WEDNESDAY

THURSDAY:
  • Spaghetti
  • Green Salad
  • Garlic Toast

FRIDAY:

Not sure yet -- my parents are coming and we figure something out.


What's on your menu? Also do you have some quick go-to meals that you would like to share? I am always on the look out for new ideas -- especially during this time of a newborn and for the Summer season!!

    My quickest go-to dinner is to take frozen chicken breasts right out of the freezer (I buy the giant bags at Costco) brush with a little olive oil, sprinkle on whatever seasoning sounds good (I like Montreal Chicken) and throw it on the grill in the backyard. Brush with BBQ sauce near the end of cooking for a little extra flavor. It cooks in about 35 minutes and doesn't dry out like it tends to when it's been thawed! Pair it up with a steamed veggie (done in the microwave of course) and whatever side dish is handy and presto- dinner with very little effort! I probably make this once a week as soon as the weather starts getting warmer.

  3. we will make lots of large yummy salads this summer...
    I also want to find a pulled pork recipe for the crock pot...pulled pork sandwiches sound so yummy!
