Monday Menu October 1st

Welcome October!

It is really starting to feel more and more like Autumn! The weather is getting more chilly here and the leaves are really starting to turn. The pumpkins, gourds, and other harvest foods are becoming bountiful! I love it!
Autumn makes me crave soups and stews! You may see a few delicious soups, stews, chilis on our menu this week. There are quite a few new recipes that I am trying out. I just can't resist all the flavors and warm cozy tastes of Autumn soups!


Breakfasts
  • Apple Cinnamon Pancakes (Soymilk)
  • Oatmeal w/ cinnamon and raisins & PB Toast (Hot Cocoa)
  • Cereal w/ soymilk & Raisin Bread Toast (Juice)
  • English Muffins w/ PB & Banana (Hot Cocoa)

Lunches
  • PB& J, Carrots & Dip, Fruit
  • Tuna Salad Sandwiches, Chips & Salsa, Fruit
  • Grilled Cheese w/ Apple, Celery & PB, Fruit
  • Leftovers

Dinners


SUNDAY:

Lentil Tacos
w/ lettuce, tomatoes, cheese

Fizzy Frozen Mock-a-Rita

MONDAY:
Wild Rice and Mushroom Soup from Sunset Magazine
No-Knead Bread
Green Salad

TUESDAY:

Crock Pot Bean and Barley Vegetarian Chili
I am using white beans instead of kidney (this is what I have already)
Topped w/ avocado, cilantro, and cheese
Cornbread

WEDNESDAY:
Garlicky Pasta with Fresh Tomatoes and Basil
Green Beans
Cheesy Herb Bisquits

THURSDAY:

Split Pea-Spinach Dal with Cauliflower

Naan Bread from Trader Joes


FRIDAY:
LEFTOVERS or Something From Freezer

  1. I'm going to try your crock pot bean chili. I've been thinking of using my crock pot more and that sounds good. What is "unsweetened chocolate powder"? Is that the same thing as unsweetened cocoa? I've never seen that ingred. added to a chili recipe - should be interesting.

  3. Teri -- I am glad you are trying to use crockpot more---me too! Especially since it is cooler weather and easy to use! I am not sure about the cocoa--I have not tried this recipe before (a new one to me). However, I am going to use unsweetened cocoa or I may skip this.
