Monday Menu June 25th


MONDAY
BREAKFAST:
Eye Opener Spread w/ Whole Wheat English Muffins
Seasonal Fruit
Orange Juice

DINNER:
Grilled Fruit & Cheese Sandwich
Homemade French Fries
Coleslaw

TUESDAY
BREAKFAST:
Jumbo Peanut Butter Scones
Orange Sections topped/ w vanilla yogurt


DINNER:
Mushroom-tofu pockets
Garden Greens w/ walnuts

WEDNESDAY

BREAKFAST:
Cinnamon Snails
Sliced Cantaloupe
Orange Juice

DINNER:
Sesame Stir-Fry
Steamed Brown Rice
Edamame
Gyoza


THURSDAY
BREAKFAST:
Apple Crisp (see recipe below)
Toast
Soymilk

DINNER:
Crockpot: Vegetarian Posole
Whole Wheat Tortillas
Cantaloupe & Avocado Salad w/ chili dressing

FRIDAY--SUNDAY (CAMPING) ! :-)

Apple Crisp
3 cups Apples, sliced and cut
1 cup Rolled Oats
1 cup Raisins
1/2 cup Sunflower Seeds, raw, hulled
1/2 cup Nuts (Walnuts, Cashews, or Almonds), shelled, raw
1-2 tsp Cinnamon (to taste)
1 Tbsp honey or brown sugar (to taste)

1 Wash and clean the apples. Cut into eighths from top to bottom. Remove the core portion of the apple from each slice and cut each slice into 1/4 inch pieces. Add the other ingredients and mix well.
2 Cook in a microwave oven on "high" for 10 minutes (mix again after 5 minutes). Or, bake in a preheated (350ยบ F.) oven for 20 minutes.
3 Serve and enjoy!

  7. Great recipes! I just went camping this last weekend. This is a good time to share your camping recipes - especially vegetarian ones. People are always looking for variety when they go camping.
